1 cup of shredded cheddar cheese
1/2 cup of milk
2 tablespoons of all-purpose flour
2 tablespoons of butter
1 cup of beef broth
Instructions:

Preheat your oven to 375°F.
In a large mixing bowl, combine the ground beef, breadcrumbs, egg, salt, and black pepper. Mix well until all the ingredients are well combined.
Roll the mixture into small balls, about 1 inch in diameter. You should be able to make around 20-25 meatballs.
In a large skillet, heat some oil over medium heat. Add the meatballs and cook for 5-7 minutes or until browned on all sides. Remove the meatballs from the skillet and set aside.
In the same skillet, add the diced onions and bell peppers. Cook for 2-3 minutes or until the onions are translucent.
Add the sliced potatoes to the skillet and stir well to combine.
In a small saucepan, melt the butter over medium heat. Add the flour and whisk until well combined.
Slowly add the beef broth and milk to the saucepan, whisking constantly to prevent lumps from forming. Bring the mixture to a boil and cook for 1-2 minutes or until the sauce thickens.
Pour the sauce over the potato mixture in the skillet and stir well to combine.
Transfer the potato mixture to a greased casserole dish.
Arrange the meatballs on top of the potato mixture in the casserole dish.
Sprinkle shredded cheddar cheese over the top of the casserole.
Cover the casserole dish with foil and bake for 35-40 minutes or until the potatoes are tender and the cheese is melted and bubbly.
Remove the foil and bake for an additional 5-10 minutes or until the cheese is golden brown.
