SOUTHERN FRIED SALMON PATTIES

 

Here’s a recipe for Southern Fried Salmon Patties:

Ingredients:

1 can (14.75 oz) pink salmon
1/4 cup finely chopped onion
1/4 cup finely chopped green bell pepper
1/2 cup cornmeal
1/2 cup all-purpose flour
1 tsp baking powder
1/2 tsp salt
1/4 tsp black pepper
2 large eggs, beaten
1/4 cup milk
Vegetable oil, for frying

Instructions:

Drain the canned salmon and remove any bones or skin. Flake the salmon with a fork and place it in a large mixing bowl.
Add the chopped onion and green bell pepper to the bowl with the salmon, and mix well.
In a separate bowl, whisk together the cornmeal, flour, baking powder, salt, and black pepper.
Add the dry ingredients to the salmon mixture, and stir until well combined.
In another small bowl, whisk together the eggs and milk.
Pour the egg mixture into the salmon mixture, and stir until everything is evenly combined.

Heat a large skillet over medium-high heat, and add enough vegetable oil to cover the bottom of the skillet by about 1/4 inch.
Using a spoon or a cookie scoop, drop the salmon mixture into the hot oil, forming patties about 2-3 inches in diameter.
Fry the patties for about 2-3 minutes per side, or until they are golden brown and crispy.
Use a slotted spatula to transfer the patties to a paper towel-lined plate to drain off any excess oil.
Serve the Southern Fried Salmon Patties hot with your favorite sides, such as mashed potatoes and green beans.
